The slightly nutty flavour of cauliflower comes through very well when served cold as a salad. A dressing of soured cream with a touch of curry powder gives just the right amount of piquancy to the dish.
Break the head of cauliflower into small sprigs and rinse in cold water. Add to a pan of boiling salted water and simmer for about 8–10 minutes or until barely tender. Drain the sprigs of cauliflower and place in a serving bowl.
Blend the soured cream, sugar, curry powder and lemon juice to taste in a small basin. Pour over the cauliflower sprigs while they are still warm. Toss gently i
