Mint gives the essential flavour to the dressing served over these pears. Take care to chop mint with a stainless steel knife to preserve the colour and add just before serving for the freshest taste.

Ingredients

  • 4 ripe dessert pears

    Method

    Choose ripe dessert pears such as Comice or Williams. Measure a good seasoning of salt and pepper and the sugar for the dressing into a bowl. Add the strained lemon juice and stir in the oil. The chopped parsley and mint are added just before spooning the dressing over the pears.

    Peel the pears, cut in half and remove the core with a teaspoon. Arrange on a salad plate with crisp lettuce leaves and immediately spoon over the dressing. Serve with brown bread and butter.
