Mozzarella cheese from Italy has a smooth texture and is absolutely white in colour. It’s a cheese that can do with a little ‘dressing up’ and goes well with salad ingredients. Serve it with sliced tomato and cucumber to make a striking first course that is cool and fresh on a hot day.


  • 1 mozzarella cheese
  • ½ cucumber
  • 4 large tomatoes


    Remove the paper wrapping and slice the mozzarella cheese. Peel and thinly slice the cucumber; skin and slice the tomatoes.

    Peel the garlic and leave to marinate in the oil for about 1 hour. When the oil has taken the flavour remove and discard the garlic. Place a seasoning of salt and pepper, the oregano and the vinegar in a basin, add the oil and mix well.

    Arrange slices of mozzarella, cucumber and tomato in neat lines of contrasting colours on four serving plates. Spoon over the dressing. Serve with freshly milled pepper over the top.
