Mozzarella cheese from Italy has a smooth texture and is absolutely white in colour. It’s a cheese that can do with a little ‘dressing up’ and goes well with salad ingredients. Serve it with sliced tomato and cucumber to make a striking first course that is cool and fresh on a hot day.


  • 1 mozzarella cheese
  • ½ cucumber
  • 4 large tomatoes


Remove the paper wrapping and slice the mozzarella cheese. Peel and thinly slice the cucumber; skin and slice the tomatoes.

Peel the garlic and leave to marinate in the oil for about 1 hour. When the oil has taken the flavour remove and discard the garlic. Place a seasoning of salt and pepper, the oregano and the vinegar in a basin, add the oil and mix well.
