Garlic blends well with mushrooms to give them a delicious flavour. Prepared in this way they make an attractive garnish for steak or chops. For a milder garlic taste, simply rub round the inside of the frying pan with a crushed garlic clove before adding the butter for frying.


  • 225 g/8 oz small button mushrooms
  • 1–2 cloves garlic
  • salt
  • 50 g/2 oz butter
  • 1 tablespoon chopped parsley


    Wipe the mushrooms, trim any stalks level with the caps and slice the mushrooms thinly. Peel the garlic cloves and, using the blade of a knife, mash the garlic to a purée with a little salt. Beat the garlic into the butter.

    Melt the garlic butter in a frying pan and when hot add the mushrooms. Fry gently for 2–3 minutes, tossing the mushrooms in the butter. Sprinkle with extra salt to taste and add the chopped parsley.
