Plums baked in the oven are less likely to break up than stewed plums. The sugar, lemon juice and water form a delicious syrup during the cooking. Serve these with cream, vanilla ice cream or with a baked egg custard.
Wipe the plums and place in a casserole dish. If preferred they can be halved and stoned before cooking. Sprinkle with the sugar and add the lemon juice and water. Cover with a lid, place in the centre of a very moderate oven (160°C., 325°F., Gas Mark 3) and bake for 30–40 minutes. The fruit should be tender but still keep its shape. Serve warm or cold.
