The strong flavour of garlic butter sometimes discourages people from eating snails, so always check before you serve them. Edible snails are specially bred, the finest being vineyard snails reared and fattened on vine leaves. The average-sized can contains 24 snails with shells; allow six snails per serving for four people. Any accompanying snail shells can be washed and used again. After the first time, you can buy the cans of snails without the additional shells.
