Baked Potatoes with Salt

Potatoes are just right now for baking in their jackets. Choose potatoes that go soft and floury. Roll them in kitchen salt before baking – salt brings out the flavour and keeps the skins crisp.

Ingredients

  • 4 large even-sized potatoes
  • coarse kitchen salt
  • butter

    Method

    Scrub the potatoes well and while still damp roll in kitchen salt. Set in a baking or roasting tin – this is easiest for four or more potatoes. Place in a moderate oven (180°C., 350°F., Gas Mark 4) and bake for 1½-1¾ hours. When cooked the potatoes will feel quite soft when the sides are gently pressed.

    Make a crossways slit on the top of each one using a sharp knife. Hold the potato in a cloth and squeeze gently to force the potato open and push the middle up. Top with a pat of butter and serve.
