Many fruits go well with the milder flavour of cream or cottage cheese and pears are no exception. Choose ripe, juicy pears for this recipe; they make an attractive first course prepared in this way.


  • 3 ripe pears
  • 175 g/6 oz fresh cream cheese
  • 1โ€“2 tablespoons double cream
  • salt and freshly milled pepper
  • lettuce leaves


    Peel the pears and slice in half lengthways. Scoop out the cores with a teaspoon and rub the pears over with the cut side of a lemon to prevent them from becoming dark.

    Blend the cream cheese and soften by adding a little cream. Season with salt and pepper and spoon into the cavity in each pear half. Arrange on crisp lettuce leaves.

    Mix the seasoning, sugar and lemon juice for the dressing. Add the oil and shake or whisk well to make an oil and vinegar dressing, using lemon juice instead of vinegar. Spoon over the pears and serve.
