Syllabub never fails to be a success as a dinner party dessert and it is very easy to make. This mixture is rich and portions should be small. Serve with soft sponge fingers.

Ingredients

  • 2 small oranges
  • ½ lemon
  • 50 g/2 oz castor sugar
  • 3 dl/½ pint double cream

    Method

    Finely grate the rind from 1 orange into a mixing basin. Add the strained juice from both the oranges and the lemon. Add the sugar and stir until dissolved. Add the cream and whisk until the mixture is thick. Pour the mixture into individual glasses. Decorate with a little grated rind from the remaining orange peel. Chill until ready to serve.
