The crowning touch for Christmas Day’s plum pudding is the sauce, rich with a flavouring of fruit or spirits. ( for Rich Christmas pudding recipe.)

If the cold hard sauces are not to your taste here’s a hot sauce for you. Orange and lemon give the mixture a good flavour and lovely colour.

Ingredients

St. Clement’s Sauce

  • 100 g/4 oz butter
  • 100 g/4 oz castor sugar
  • juice of 1 orange
  • 1 rounded teaspoon cornflour
  • finely grated rind and juice of 1 lemon

    Method

    Measure the butter and sugar into a saucepan and cream together until light. Set the pan over low heat and bring slowly up to the boil. Stir in the orange juice and cornflour blended together and the lemon rind and juice. Reheat until thickened and boiling. Draw the pan off the heat and serve warm.
