Any leftover rum butter makes a delicious filling for baked apples.


  • 175 g/6 oz unsalted butter
  • 175 g/6 oz soft brown sugar
  • little grated lemon rind
  • 1 teaspoon lemon juice
  • pinch cinnamon
  • 3–4 tablespoons nun


    Cream the butter and sugar until soft, then mix in the lemon rind and juice and cinnamon and beat thoroughly. Beat in the rum gradually and chill until firm.
