Chicken and Lentil Casserole

It’s surprising how much you can do with a handful of storecupboard ingredients. This is the perfect dish for when the cold nights roll in or you have a few friends coming round and can’t do a full shop. Lentils bulk out the dish and complement both the tomatoes and chicken well. Serve with boiled potatoes or crusty bread to mop up the sauce.
