I love the intensity of this sauce, which brings together three forms of tomato: fresh, tinned and sun-dried. It combines the tomatoes with ingredients that bring out their best side, namely red wine vinegar, garlic and dried mixed herbs.
Heat the oil in a frying pan (skillet) over a medium-low heat. Add the onion and fry for 6-8 minutes or until softened. Stir in the garlic, cook for 1 minute. Add the vine tomatoes and cook for 10 minutes or until they begin to soften.
Stir in the chopped sun-dried tomatoes with any of their oil remaining on the cutting board. Sprinkle in the mixed herbs and pour in the tinned tomatoes.
