Although ’nduja paste is a relatively new ingredient to me, it’s been gracing the kitchens of Calabria for much longer. A spoonful stirred through tomato sauce imparts a warming heat and a saltiness that brings aubergines (eggplants) to life. Other veg which work well here are courgettes (zucchini), red (bell) peppers and mushrooms – the classics that cosy up to tomatoes so easily.
