The literal translation of ‘arrabbiata’ from Italian to English is ‘angry’. This fiery sauce is a great one to have in your repertoire as it can be easily made from storecupboard ingredients. It’s a good base that you can add any veg to.

Ingredients

  • 2 tablespoons olive oil
  • 1 large garlic clove, crushed or finely grated (shredded)
  • 1-2 red chill

Method

Heat the oil in a frying pan (skillet) over a low heat. Add the garlic and chillies and fry for around 10 minutes. They shouldn’t brown, just allow the oil to infuse with their flavours.

Stir the tinned tomatoes into the oil and cook for around 15 minutes so it thickens up a little.

If serving with pasta, cook the pasta according to the packet instructions, usually around 9-10 m
