A Sicilian twist on the classic Genovese basil pesto, this is a tomato-based pesto. Using tinned tomatoes means you can enjoy this sauce all year round.
Toast the almonds in a dry frying pan (skillet) for a few minutes until lightly golden. Give the pan a shake every now and then, watching to ensure the almonds don’t burn.
Put all the ingredients, including the almonds, into a food processor and blitz to a coarse paste. Season well with salt and freshly ground black pepper and briefly blitz again.
