Tomato, Courgette and Feta Sauce

As with many Mediterranean vegetables, courgettes (zucchini) go so well with tomatoes. I love the saltiness that feta brings, as well as dotting this sauce with pops of white that add visual interest. Whenever I fry courgettes, I scoop out the seeds first so they brown nicely without becoming mushy. The seeds then get stirred back in later on so that nothing goes to waste.
