Paella is thought to have originally included rabbit, as well as chicken, but then fishermen adapted it by adding seafood, presumably from their daily catch.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed or finely

Method

Heat the oil in a large frying pan (skillet) with a lid over a medium-low heat and fry the onion for 10-12 minutes or until softened but not golden. Stir in the garlic and cook for 1 minute. Next, add the paprika and cook, stirring continuously, for 30 seconds.

Tip in the paella rice and cook for a few minutes until beginning to turn opaque at the edges. Pour in the wine and cook for a
