Mussels are a reasonably inexpensive protein, which are super-quick to cook and yet feel incredibly indulgent. You can swap out the ’nduja for a chopped red chilli, if you like, but I really do recommend the ’nduja as the flavour is amazing – smoky and spicy.
Heat the oil in a large saucepan with a lid over a medium heat. Add the shallots and fry for 4-5 minutes to soften before adding the garlic and frying for a further minute. Stir in the ’nduja and cook for a minute to release the flavours.
Pour in the tinned tomatoes and wine and then simmer for 5 minutes.
