What I love about a one-pot pasta dish is that the starch from the pasta helps to make a lovely, glossy sauce as it cooks. It’s even better when that sauce is the classic flavour combination of tomato and mascarpone. I squeeze on a bit of lemon juice at the end to elevate it that little bit more.
Heat the oil in a large pan with a lid over a medium heat. Add the onion and red pepper and fry for 5 minutes before adding in the garlic and paprika and frying for 1 minute.
Stir in the tinned tomatoes and tomato paste. Tip in the pasta and pour over 900ml (30fl oz) water. Season really well with salt and freshly ground black pepper and stir. Pop on the lid, then simmer for 10 minutes.
