Although lamb is most often paired with rosemary, I find that beef works just as well, plus the cost is much more manageable. Another benefit is that beef and tomatoes are a match made in heaven. This is perfect for when you want a roast that requires minimal effort for maximum flavour. Any leftovers are great during the following week served with some fresh mash and/or steamed veg for a quick evening meal.
