Goulash originated in Hungary, but went on to grow in popularity all over central Europe. This paprika-heavy version began much later, but makes sense to me because paprika, tomatoes and beef are a great combination. Slow-cooking the beef in the tomatoes makes the meat incredibly tender and the sauce rich and flavourful. It’s great served with boiled potatoes or plain rice.
