I love paprika. Lucky, really, because it goes so well with tomatoes. Combining paprika, tomatoes and sour cream delivers a warming, cheerful sauce which is the perfect companion to chicken. I like to serve this with brown rice, but it also goes great with potatoes, too.
Heat the oil in a large saucepan or frying pan (skillet) with a lid over a medium heat. Put the chicken thighs in the pan, skin side down, then season and fry for a few minutes to brown. Flip the chicken over, season the other side and cook for a few more minutes until the chicken is browned all over. Remove the chicken from the pan and set aside.
