This is not the ratatouille you may recall from the Disney movie, where vegetables are cut into paper-thin slices and baked in concentric circles. Instead, I prefer to chop everything into chunks and cook it on the hob (stovetop) so it’s saucier. That way, it can be used for a range of dishes or served on its own as the champion on the plate. Try spooning the ratatouille onto slices of toasted bread and topping with marinated anchovies to create Basque-style pintxos.
