  • 1 onion, chopped

Method

Heat the oil in a saucepan over a gentle heat and fry the onions for 10-12 minutes or until softened but not golden.

Tip in all the remaining ingredients except the lemon juice and simmer for around 20 minutes or until much thickened.

Season, blend until smooth then drizzle in the lemon juice and stir. Pour into a sterilised jar or bottle and keep for up to 3 months in the fridg
