For a more grown-up salsa, chilli really lifts things. You can, of course, add more or less chilli to work with your preferred spice level, but this one gives you a mild to medium heat depending on the potency of your green chilli. This salsa is great served with potato crisps (chips), as part of a salad or in a spicy fajita.
Put the olive oil, garlic, green chilli and coriander in a food processor and blitz until finely chopped but not a paste.
Tip in the tinned tomatoes, tomato paste and sugar. Season with salt and pepper and pulse another couple of times.
