This is a great basic curry sauce to have up your sleeve to elevate your Friday-night fakeaways. Or you can make a ready-to-indulge batch and keep it in the freezer. Tinned tomatoes are the base ingredient for several curries as they go well with the spices and enhance the colour of the dish.
Heat the oil in a frying pan (skillet) or saucepan over a medium heat. Add the onion and fry until soft and beginning to brown, about 6-8 minutes. Stir in the garlic and ginger and cook for a couple of minutes before stirring in the spices. Cook for 1 minute.
