Tomatoes form the base of many a curry, and this sauce is a great foundation on which to build a curry by adding in your chosen meats, pulses and veg. Chicken or lamb go particularly well as do chickpeas (garbanzo beans). Courgettes (zucchini), squash and spinach are all equally good, although the latter is best added alongside something else. If you like a deeper tomato flavour, opt out of the coconut milk. However if you prefer a creamier curry, then the coconut milk is perfect.
