This classic tapas is traditionally made by rubbing toasted bread with a really ripe tomato, however, I love making it with good-quality tinned tomatoes. It makes a great lunch and is lush topped with ham, anchovies, cheese or simply a few torn basil leaves.
Slice the ciabatta loaf in half lengthways. Toast the ciabatta halves under the grill (broiler) or in the toaster until golden on both sides.
Cut the garlic clove in half. Rub the cut side of the garlic clove over each slice of the toasted ciabatta. If you love garlic, push a little harder so you’re almost using the toast as a grater.
