It’s always handy to have a speedy side dish up your sleeve, even better when it’s super simple but really flavourful. I love serving this alongside roast chicken or at a barbecue. It’s also great cold so you can take it on a picnic, have it during the warmer months or eat the leftovers straight out of a container from the fridge. (And yes, I have done that.)
