Melt the butter in a non-stick griddle or frying pan over a medium-hot heat. Add the pineapple pieces and sprinkle with the sugar. Griddle each side for 2-3 minutes, until caramelized and golden.
Remove the pineapple from the heat and lightly season with a little salt and pepper.
Slide each piece on a wooden skewer, if available, and eat hot or cold.<
