Method

  1. Put on your kettle to boil.
  2. Add the onion and garlic to a deep saucepan along with the oil. Fry over a medium heat for 3-4 minutes.
  3. Add the mixed herbs, tikka spice and chicken thighs, skin-side down. Cook for a further 4-5 minutes, stirring occasionally.
  4. Add the carrots and courgette to the saucepan along with 1 crumbled chicken stock cube
