350-500 g beef brisket

Method

  1. Put on your kettle to boil.
  2. Trim the beef of any excess fat and cut the meat into 4cm chunks. Generously season with pepper.
  3. Add 1 tablespoon of the oil to a large saucepan over a medium heat. Add half the meat and brown it for 5-6 minutes, turning occasionally until all sides are browned - you’re looking for a good crust. Transfer the meat to a plate
