- Add the oil to a large saucepan and fry the onion and garlic over a medium-low heat for 5 minutes. Put on your kettle to boil.
- Add the leftover root vegetables to the pan and sauté for another 5 minutes.
- Pour 800ml boiling water into the saucepan along with the stock cube and mixed herbs. Bring to the boil, stir and gently simmer for 10 minutes.
