Method

  1. Heat the olive oil in a saucepan over a medium heat along with the apple, onion and garlic. Throw in the tandoori spice, cherry tomatoes, a good pinch of salt and pepper and 200ml water.
  2. Bring the mixture to the boil, then reduce to a bubbling simmer for 45 minutes, stirring occasionally.
