Method
- Add the peanuts, coconut milk and tandoori spice into a small saucepan. Bring to the boil and simmer for 5 minutes.
- Add the garlic, ginger, lime juice, coriander stalks and 100ml water. Blitz with a stick blender until smooth.
- Taste test and season with a good pinch of salt, if necessary. Keep refrigerated in an airtight container or jar for 2-3 days.
