Carrots with cumin (zanahorias con comino) is a classic tapa found throughout the south of Spain, in Andalusia, but its origins can be traced across the Mediterranean—to Morocco. It’s a simple recipe, to be sure, but each step is important. Toasting the cumin seeds adds a layer of complexity—don’t use ground cumin here, or you will miss out!—and grinding the seeds with garlic to create a paste makes for an intensely flavorful dressing.
