Edy Massih’s Lebanese Stuffed Zucchini with Brown Butter Pine Nuts

Koussa mehshe—Lebanese stuffed zucchini—takes Edy, chef and owner of Edy’s Grocer in Brooklyn, right back to his grandmother’s blue-tiled kitchen, where he used to sit, mesmerized by her work and the love she poured into it. She’d carve out the flesh of each small green zucchini and stuff them with hashweh—a filling made of cooked ground beef, onion, baharat spice blend, pin
