  • 200 g (7 oz) pork belly, thinly sliced
  • 1 tablespoon vegetable oil<

Method

Cut the slices of pork into 3 cm (1¼ in) pieces. Heat the oil in a large saucepan on a medium heat and sauté the pork until the meat turns pale. Add the onion and sauté for 1 minute. Add the dashi, mirin and soy sauce and bring to the boil. Reduce the heat to low and cook until the onion is tender. Crumble the curry sauce mix cubes and add them to the pan. Our whole family are big noodle fans, so when it was my eldest son Ben's turn to cook this week, this was a popular choice. Really simple recipe and a great use for our stockpile of Japanese curry sauce. Ben jazzed it up with a fried egg on top of each bowl, which worked well, too!
