  • 100 g ( oz) boneless chicken thigh
  • 1 tablespoon vegetable oil

Method

Cut the chicken into 2 cm (¾ in) cubes. Heat the vegetable oil and butter in a frying pan on a medium heat, then add the chicken and onion. Sauté until they are cooked, then add the mushrooms and rice. If the rice grains have stuck together, sauté until they are separated and heated through. An outstanding cookbook in general. This recipe is not a great version of Omuraisu. Good question Matthew, I've not found quite the right recipe to make an excellent one at home. The best ones at restaurants have a sweet sauce to go with the omelette and rice and a served with a burger patty.
