Jerusalem artichokes are the ugly ducklings of vegetables. They have an undeservedly bad reputation because they are usually badly cooked and, when badly cooked, result in a great deal of flatulence! They are, in fact, one of the most beautiful vegetables when treated correctly.
Peel and slice the artichokes into 2-cm collops. Leave to soak in the acidulated water for one to two hours (this process significantly reduces the flatulence problem). Strain the collops, cover with fresh water, bring to the boil and simmer for 15 minutes until tender. Strain and shake off any excess water.
