This dish is half way between a soup and a salad. Its distinction depends entirely on the quality of the oil used. The acid in the tomatoes and vinegar simply helps one to appreciate the oil. There is a very old dish called Imam bayaldi which in literal translation means ‘the Imam swooned’. The point of the story is that he fainted not because of the complexity of the dish which was basically stuffed eggplant, but because the quantity and quality of olive oil the dish demanded cost a
