  • 1 kg black olives
  • 1 tbl chopped thyme
  • 1 tbl

Method

Wash the olives and slash them with a sharp knife. Toss them with the herbs, seasoning, garlic and chilli and put them in a preserving jar. Cover with the oil and leave to marinate for at least one week. The oil can be used to give salad dressings extra flavour.
