My favourite quick pasta dish has always been spaghetti alio e pepperoni, a simple mixture of olive oil, garlic, chilli, black pepper and fresh herbs. Although I’m not a fan of Asian food, a delicious variation of this recipe was introduced to me by my Japanese friend Tomono Wynn. It is a simple recipe expressing complex flavours. Mentaiko (chillied cod’s roe) is available from Japanese specialty shops.
