  • 6 veal kidneys
  • 100 g butter

Method

Remove the central fibres and gristle from the kidneys with a sharp knife. Wash them under cold running water to get rid of any acrid smell.

Toss the onion and carrot in 50 g of the butter over a low flame until they are soft. Add the garlic, and the morels which have been sliced into thin strips. Add the parsley and thyme and season with salt and pepper. Remove from the flame and allow
