Method

Remove the flesh and soft glutinous parts from the oxtail and break into fine pieces. Cut the leeks into julienne and blanch. Rinse under cold water and allow to cool. Cut the cucumber into 5-cm lozenges about 1-cm thick. Cut the cornichons into fine julienne. Assemble all the salad ingredients in a bowl.
