  • ½ green cabbage, finely sliced (thick stems discarded)
  • 3 cooking apples, peeled and finely sliced
  • 2 onions, finely sliced

Method

Melt the onions and garlic in the butter over a medium flame taking care not to brown them. Add the cardamom, cloves, pepper, thyme and juniper berries and continue cooking until the onion is translucent. Add the cabbage and apple and stir constantly with a wooden spoon until the cabbage has begun to wilt. Add the white wine and over the highest flame continue to stir the cabbage until the liqu
