  • 200 g fresh shiitake, or 75 g dried mushrooms

Method

Simmer the garlic, ginger and chillies in the vinegar and wine over a low flame for five minutes. Season the mushrooms with salt. In a wok or frying pan heat the oil over a high flame. Toss the shiitake in the hot oil for ten seconds. Add the oyster mushrooms and cook over a high heat for a further ten seconds.
