This is an adaptation of two recipes — one traditional, collected I remember not when, and the other a version given in Gaston Lenôtre’s fine book, Desserts and Pastries.

  • 200 g self-raising flour
  • 50 g cornflour

Method

Mix the flour, cornflour and ground almonds together and set aside to rest. Beat the eggs and sugar until they become light yellow.
