Bring a big pan of water to the boil. Add the nettles and cook for 2 minutes. Strain the nettles and refresh them in an ice bath. Squeeze the water out and chop the nettles. Transfer to a blender and add 150ml of cold water. Blend to a smooth purée. Pass through a chinoise and season with a little salt. Slowly stir in the Ultratex until the purée thickens slightly.
